IL BARETTO RIYADH UNVEILS NEW SEASONAL MENU EMBRACING SPRINGTIME IN ITALY

The beloved KAFD trattoria is transporting diners to springtime in Italy with a menu of fresh flavours and seasonal produce

 

Paying homage to Italy’s culinary traditions and embracing the tradition of eating the seasons, Il Baretto Riyadh has unveiled its new seasonal spring menu. Showcasing its commitment to preparing the freshest product and supporting both local and Italian producers, the new menu celebrates Italy’s diverse and beautiful regions and dining traditions. 

 

Transporting diners to a warm spring day in Italy, the new menu offers wholesome, rustic fare reminiscent of family-run trattorias and decadent dishes found in the fine dining establishments of Milan, Florence, and Rome. Available from March 21st until June 21st, the new menu was created by head chef Alex Simone, whose passion for seasonality and fresh flavours drives Il Baretto’s seasonal menu programme across its Riyadh and London outlets. 

 

Perfect for the warmer weather, fresh starters include the Pomodori – Heirloom tomato with apricot chimichurri and coriander – Kale Salad, made with strawberries, shallot, roasted cashew nut and ginger dressing – and the Smokes Salmon Salad. Perfect for a small bite with friends, new antipasti additions include Tonna Marinato – marinated tuna in a ginger and balsamic dressing. A nourishing and wholesome Minestrone al Pesto - Spring vegetable soup with pesto sauce replaces the popular Autumn Minestrone. 

 

Il Baretto is renowned for its hearty and wholesome comfort foods, and new spring additions include the Gnocchi Ripieni al Tartufo - Gnocchi stuffed with burrata and black truffle, Risotto Primavera - Acquarello rice with spring vegetable and aged parmesan - and Risotto al Tatufo - Acquarello rice with seared foie gras, black truffle and truffle sauce. New homemade pasta dishes include Tuscan-inspired Cavatelli al ragu di Coniglio - Cavatelli with rabbit ragu, and Amalfi-inspired Spaghetti alle Vongole Veraci and Ravioli All’aragosta - lobster ravioli with cherry tomatoes and broad beans. Mains, or ‘secondi’, include pan-fried Chilean Seabass with roasted leek and sautéed peas, Rack of Lamb with a herb crust, wild garlic purée, peas and sautéed aubergine, and an innovative Melanzana alla Milanese - a vegan version of the classic with twice-cooked aubergines breaded in Panko breadcrumbs.

 

Il Baretto Riyadh is also renowned for its use of the Josper Grill to create a rich, deep, smoky flavour, and the new menu features a Spalla di Agnello Arrosto - slow-cooked lamb shoulder, roast potatoes and grilled vegetable serving five to six people. For indulgent seafood, there’s Granchio Reale - gilled king crab legs with citrus butter and carrot dressing. All new menu dishes pair perfectly with exquisite beverages from Il Baretto’s unique Zero Bar, which delivers gastronomical-grade drinks without alcohol, sugars and artificial flavours.
